Main Purpose of Job
The main purpose of the Food Administrator II is to direct and supervise all daily activities of the food service operation at the Lower Eastern Shore Children’s Center Center (LESCC). This includes planning, organizing, evaluating, and directing food production and food service including the procurement of food and food service supplies. This position supports the mission of the agency by providing safe, nutritious, and appetizing meals that promote the optimal health, growth and well being of the youth housed at LESCC.
POSITION DUTIES
Plans, organizes and directs the daily food production and food service program. Coordinates the scheduling of meals with other daily operational programs and activities within the facility.
Supervises kitchen sanitation and safety. Monitors the food service operation for compliance with HACCP-based standard operating procedures as defined in the HACCP policy binder. Monitors the food service operation for compliance with health department regulations including COMAR10.15.03 and DJS Juvenile Detention Standards.
Utilizes daily population counts and the DJS menu to determine the quantities of food to procure based on food storage inventory. Performs an inventory of food and food-related supplies on a regular basis as needed
MINIMUM QUALIFICATIONS
Experience: Six years of experience, two years of experience managing large-scale food service operations in an institutional, commercial, industrial or similar organization and an additional four years of experience supervising in a large- scale food service operation.
Notes:
1. Candidates may substitute the possession of a Bachelor's degree from an accredited college or university and two years of experience managing large-scale food service operations in an institutional, commercial, industrial or similar organization for the required experience.
2. Candidates may substitute U.S. Armed Forces military service experience as a commissioned officer in Food Services Officers classifications or Food Services Manager and Services Officer specialty codes in the food service management field of work on a year-for-year basis for the required experience.
DESIRED OR PREFERRED QUALIFICATIONS
Experience
in food production or service in an institutional setting such as hospitals,
nursing homes, universities, or correctional facilities.
Experience
supervising a large-scale food service operation in an institutional,
commercial, industrial, or similar organization.
A
Bachelor’s degree in Food & Beverage Management, Hospitality Management,
Dietetics, Nutrition, Food Service Management, Restaurant and Food Services
Management, Culinary Arts, Institutional Administration, or a closely related
field.
LICENSES, REGISTRATIONS AND CERTIFICATIONS
Employees in this classification may be assigned duties
which require the operation of a motor vehicle.
Employees assigned such duties will be required to possess a motor
vehicle operator’s license valid in the State of Maryland.
