Introduction

The State of Connecticut Department of Correction (DOC) is recruiting for full-time, scheduled at 36.25 hours a week, Correctional Food Services Supervisor 1. This posting will be used to create a pool of candidates to fill future vacancies at Correctional Institutions as they occur. All vacancies are on either first, second, or third shift.

PURPOSE OF JOB CLASS (NATURE OF WORK)

In a Department of Correction facility or district this class is accountable for the preparation, retherming and service of daily meals.

EXAMPLES OF DUTIES

Supervises inmates and assists in preparation, retherming and serving of food in a correctional facility or district; oversees cleaning, sanitation and maintenance of kitchen area and equipment; instructs and trains inmates in light food preparation, retherming and serving; assists with storage, rotation and security of food; keeps records and makes reports; assists with requisition of food and kitchen supplies; maintains discipline and security measures; may assist in food preparation, cooking and serving; may conduct security checks and tours; may physically restrain inmates, quell disturbances and otherwise assist custodial forces in emergencies; performs related duties as required.

KNOWLEDGE, SKILL AND ABILITY

Knowledge of current materials and equipment used in large scale food preparation and service; knowledge of kettle preparation, oven and grill work; knowledge of principles, methods and practices of food preparation and service; knowledge of safety and sanitation problems related to large scale food service operations; considerable interpersonal skills; oral and written communication skills; ability to instruct inmates; ability to keep records and make reports; ability to read and write recipes; ability to perform under stress; ability to utilize computer software; some supervisory ability.

MINIMUM QUALIFICATIONS - GENERAL EXPERIENCE

Two (2) years of experience in the preparation and serving of complete daily meals in a large scale (500 meals per day) institutional or commercial setting such as a hospital, residential school, extended care facility, rest home, full service restaurant, military mess, large catering business or other similar environment.

NOTE: Experience in fast food operations does not qualify.

MINIMUM QUALIFICATIONS - SUBSTITUTIONS ALLOWED

College training in dietetics, hotel, restaurant and/or food service, nutrition or a related field may be substituted for the General Experience on the basis of fifteen (15) semester hours equaling one-half (1/2) year of experience to a maximum of one (1) year.

SPECIAL REQUIREMENTS

  1. Incumbents in this class are required to possess a high school diploma or General Educational Development (GED) certification at the time of appointment.
  2. Incumbents in this class may be required to successfully complete a formal training course in correctional work to develop the knowledge, skills and abilities to successfully perform the duties of the class.

CHARACTER REQUIREMENTS

In addition to the checking of references and of facts stated in the application, a thorough background investigation of each candidate may be made before persons are certified for appointment.

PHYSICAL REQUIREMENTS

  1. Incumbents in this class must have general good health, be free from any disease or injury which would impair health or usefulness and possess and retain sufficient physical strength, stamina, agility, endurance and visual and auditory acuity required to perform all the duties of the class.
  2. A comprehensive medical examination, including a controlled substance screening, will be required of all applicants upon a conditional offer of employment.

WORKING CONDITIONS

Incumbents in this class may be exposed to significant stress of confinement within a dangerous and volatile prison population and to considerable danger of injury from assaultive and/or abusive inmates and disagreeable conditions.
