PURPOSE OF JOB CLASS (NATURE OF WORK)

In the Department of Developmental Services, Southbury Training School or Department of Mental Health and Addiction Services, Connecticut Valley Hospital this class is accountable for supervising the delivery of nutritional services to the residential population.

SUPERVISION RECEIVED

Receives general direction from the Director of Food Services, Assistant Superintendent of Schools, institution head or other employee of higher grade.

SUPERVISION EXERCISED

Supervises Dietitians, Dietary Technicians and other staff assigned to food production and related areas.

EXAMPLES OF DUTIES

  • Schedules, assigns, oversees and reviews work of staff; 
  • Provides staff training and assistance; 
  • Conducts performance evaluations; 
  • Determines priorities and plans unit work; 
  • Establishes and maintains unit procedures; 
  • Develops or makes recommendations on the development of policies and standards of nutritional care; 
  • Acts as liaison with other operating units, agencies and outside officials regarding unit policies and procedures; 
  • Prepares reports and correspondence; 
  • Evaluates nutritional, psychological and cultural needs of patients and inmates and plans or approves planned menus accordingly; 
  • Records pertinent nutrition information in medical records required by JCAH; 
  • Maintains diet manuals; 
  • Plans therapeutic diets as ordered by a physician; 
  • Supervises preparation and serving of food through food service personnel; 
  • Assures prepared foods are nutritionally adequate, appetizing and attractively served; 
  • Requisitions food supplies, makes recommendations for purchase and periodically checks purchased food for conformance with specifications; 
  • Teaches nutrition to clients, inmates and/or staff; 
  • Prepares budget estimates; 
  • Participates on nutrition-related committees; 
  • Ensures nutritional services comply with JCAH and quality assurance standards; 
  • Performs related duties as required.

KNOWLEDGE, SKILL AND ABILITY

  • Considerable knowledge of
    • food values and dietetic principles; 
    • principles and practices of food production and service; 
  • Considerable
    • interpersonal skills; 
    • oral and written communication skills; 
  • Considerable ability in efficient and economic administration of food preparation and food servicing; 
  • Supervisory ability.

MINIMUM QUALIFICATIONS - GENERAL EXPERIENCE

Two (2) years of experience as a dietitian in a hospital, institution or school.

SPECIAL REQUIREMENTS

  • Incumbents in this class must possess and retain registration as a Registered Dietitian (RD) through the Commission on Dietetic Registration.
  • Incumbents in this class must possess and retain certification as a Dietitian/Nutritionist issued by the Connecticut State Department of Public Health in accordance with Connecticut General Statutes Section 20-206n and 20-206r.Incumbents in this class may be required to travel.
